  • 500 grams beef sirloin
  • 1 carrot
  • 1 liter dashi broth
  • 100 grams enoki mushrooms
  • 60 ml mirin
  • 300 grams napa cabbage
  • 120 ml ponzu sauce
  • 120 ml sesame sauce
  • 150 grams shiitake mushrooms
  • 60 ml soy sauce
  • 200 grams tofu
  • 200 grams udon noodles

Directions

Step 1
Prepare all the ingredients by slicing the beef, chopping the vegetables, and cooking the udon noodles.
Step 2
In a large pot, bring the dashi broth to a gentle boil.
Step 3
Add the soy sauce and mirin to the broth, and stir to combine.
Step 4
Arrange the sliced beef, tofu, vegetables, and mushrooms on a large platter.
Step 5
Place the pot of broth in the center of the table on a portable burner.
Step 6
Each person cooks their own meat and vegetables in the broth at the table, dipping them in the sesame or ponzu sauce before eating.
Step 7
Add the cooked udon noodles to the remaining broth at the end of the meal to enjoy as a final course.
