Crispy and cheesy potato skins perfect for an appetizer or snack. These potato skins are loaded with cheese, bacon, and green onions, and are perfect for any occasion.
Directions
Step 1
Preheat your oven to 400°F (200°C).
Step 2
Scrub the potatoes clean and dry them. Pierce each potato a few times with a fork.
Step 3
Rub each potato with olive oil and sprinkle with salt and pepper.
Step 4
Place the potatoes directly on the oven rack and bake for 45-50 minutes, or until tender.
Step 5
Remove the potatoes from the oven and let them cool slightly. Cut each potato in half lengthwise.

Scoop out most of the flesh, leaving a small layer of potato inside the skin. Save the scooped-out flesh for another use.
Step 7
Brush the inside of each potato skin with olive oil and place them on a baking sheet, skin side up.

Bake the skins for 10 minutes, then flip them over and bake for another 5-10 minutes until crispy.
Step 9
Remove the skins from the oven and fill each one with shredded cheddar cheese and crumbled bacon.
Step 10
Return the filled skins to the oven and bake for an additional 5 minutes, or until the cheese is melted.
Step 11
Remove from the oven and top each potato skin with sliced green onions and a dollop of sour cream.
