  • 2 g black pepper
  • 60 g butter
  • 2 Cornish hens
  • 4 cloves garlic
  • 1 lemon
  • 2 sprigs rosemary
  • 5 g salt

Directions

Step 1
Preheat your oven to 375°F (190°C).
Step 2
Rinse the Cornish hens under cold water and pat them dry with paper towels.
Step 3
Rub the hens with butter both inside and out. Season with salt and pepper.
Step 4
Place a lemon quarter and a rosemary sprig inside each hen.
Step 5
Arrange the hens in a roasting pan, breast side up. Sprinkle the minced garlic over the hens.
Step 6
Roast in the preheated oven for about 60 minutes, or until the hens are golden brown and the juices run clear.

Remove from the oven and let the hens rest for 10 minutes before serving.
