Ingredients

  • 500 g dried pinto beans
  • 3 garlic cloves
  • 2 tbsp olive oil
  • 1 onion
  • 1 tsp salt
  • 2000 ml water

Directions

Step 1
Rinse the dried pinto beans thoroughly under cold water.
Step 2
Place the beans in a large pot and add the water. Bring to a boil over high heat.
Step 3
Once boiling, reduce the heat to low and simmer for about 2 hours, or until the beans are tender. Stir occasionally.
Step 4
In a separate pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they are soft and translucent.
Step 5
Add the sautéed onion and garlic to the beans, along with the salt. Stir well to combine.
Step 6
Continue to simmer for another 30 minutes to allow the flavors to meld, stirring occasionally.
Step 7
Serve the frijoles hot, garnished with fresh herbs if desired.
