Ingredients

  • 0.5 tsp black pepper
  • 2 eggs
  • 300 g frozen spinach
  • 2 cloves garlic
  • 60 g grated Parmesan cheese
  • 24 jumbo pasta shells
  • 700 ml marinara sauce
  • 450 g ricotta cheese
  • 1 tsp salt
  • 240 g shredded mozzarella cheese

Directions

Step 1
Preheat the oven to 180°C (350°F).
Step 2
Cook the jumbo pasta shells according to package directions until al dente. Drain and set aside.
Step 3
In a large bowl, mix together ricotta cheese, 120 g of shredded mozzarella cheese, grated Parmesan cheese, thawed spinach, eggs, minced garlic, salt, and black pepper.
Step 4
Stuff each cooked pasta shell with the ricotta and spinach mixture.
Step 5
Spread a thin layer of marinara sauce on the bottom of a baking dish.
Step 6
Arrange the stuffed shells in the baking dish and pour the remaining marinara sauce over the top.
Step 7
Sprinkle the remaining shredded mozzarella cheese on top of the marinara sauce.
Step 8
Cover the baking dish with aluminum foil and bake for 30 minutes.
Step 9
Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
Step 10
Let the dish rest for a few minutes before serving.
