Ingredients

  • 2 tbsp basil
  • 0.5 tsp black pepper
  • 2 garlic cloves
  • 450 g ground beef
  • 120 g mozzarella cheese
  • 2 tbsp olive oil
  • 1 onion
  • 60 g parmesan cheese
  • 1 tsp salt
  • 240 ml tomato sauce
  • 4 zucchini

Directions

Step 1
Preheat the oven to 190°C (375°F).
Step 2
Scoop out the center of each zucchini half, leaving a small border around the edges. Chop the scooped-out zucchini flesh and set aside.
Step 3
In a large skillet, heat the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for another minute.
Step 5
Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.

Stir in the chopped zucchini flesh, tomato sauce, Parmesan cheese, salt, and black pepper. Cook for another 5 minutes until the mixture is well combined and heated through.

Place the zucchini halves in a baking dish. Spoon the meat mixture into each zucchini half, distributing it evenly.
Step 8
Top each stuffed zucchini with shredded mozzarella cheese.
Step 9
Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the cheese is melted and golden brown.
Step 10
Remove from the oven and sprinkle with chopped fresh basil before serving.
