Ingredients

  • 1 tsp basil
  • 1 bell pepper
  • 0.5 tsp black pepper
  • 240 ml chicken broth
  • 6 chicken thighs
  • 3 cloves garlic
  • 200 g mushrooms
  • 2 tbsp olive oil
  • 1 onion
  • 1 tsp oregano
  • 2 tbsp parsley
  • 120 ml red wine
  • 1 tsp salt
  • 800 g tomatoes

Directions

Step 1
Heat the olive oil in a large skillet over medium-high heat.
Step 2
Add the chicken thighs and brown on all sides. Remove and set aside.
Step 3
In the same skillet, add the chopped onion and bell pepper. Sauté until softened.
Step 4
Add the minced garlic and cook for an additional minute.
Step 5
Stir in the canned tomatoes, chicken broth, red wine, dried oregano, dried basil, salt, and black pepper.
Step 6
Return the browned chicken thighs to the skillet and bring the mixture to a simmer.
Step 7
Cover and cook over low heat for 45 minutes, or until the chicken is tender and cooked through.
Step 8
Add the sliced mushrooms during the last 10 minutes of cooking.
Step 9
Garnish with chopped fresh parsley before serving.
