A delicious and quintessential Canadian dish, poutine features crispy fries topped with cheese curds and smothered in a rich gravy. Perfect for a hearty snack or side dish.

Ingredients

  • 2 cups beef broth
  • 4 tbsp butter
  • 300 g cheese curds
  • 1 cup chicken broth
  • 4 tbsp flour
  • 0.5 tsp pepper
  • 4 potatoes
  • 1 tsp salt

Directions

Step 1
Preheat the oven to 200°C (400°F).
Step 2
Cut the peeled potatoes into fries and soak them in water for 1 hour to remove excess starch.
Step 3
Dry the fries thoroughly and fry them in hot oil until golden and crispy. Alternatively, bake them in the preheated oven for 30-35 minutes, turning halfway through.

While the fries are cooking, melt the butter in a saucepan over medium heat.
Step 5
Add the flour to the melted butter and whisk continuously to form a roux, cooking for about 2 minutes.
Step 6
Gradually add the beef broth and chicken broth to the roux, whisking constantly to avoid lumps.
Step 7
Bring the gravy to a boil, then reduce heat and let it simmer until thickened, about 5-10 minutes.
Step 8
Season the gravy with salt and pepper to taste.
Step 9
Once the fries are ready, place them on a serving dish and sprinkle the cheese curds evenly over the hot fries.
Step 10
Pour the hot gravy over the fries and cheese curds, and serve immediately.
