Ingredients

  • 2 cups baby spinach
  • 2 boiled eggs
  • 2 carrots
  • 2 chicken breasts
  • 4 cups chicken broth
  • 3 cloves garlic
  • 1 tbsp ginger
  • 3 green onions
  • 2 packs ramen noodles
  • 0.5 cups soy sauce

Directions

Step 1
Season the chicken breasts with salt and pepper.
Step 2
In a large pot, bring the chicken broth to a boil.
Step 3
Add the chicken breasts to the pot and reduce the heat to a simmer. Cook for about 15 minutes or until the chicken is cooked through.
Step 4
Remove the chicken from the pot and shred it using two forks.
Step 5
In the same pot, add the soy sauce, garlic, and ginger. Simmer for 5 minutes.

Cook the ramen noodles according to the package instructions. Drain and set aside.

Add the shredded chicken, green onions, carrots, and baby spinach to the pot. Cook for another 5 minutes until the vegetables are tender.

Divide the cooked ramen noodles between bowls. Ladle the broth and chicken mixture over the noodles.

Top each bowl with a halved boiled egg and additional green onions if desired.
