  • 15 g black pepper
  • 10 g garlic powder
  • 30 ml olive oil
  • 10 g onion powder
  • 10 g paprika
  • 100 g salt
  • 100 g sugar
  • 4 l water
  • 4.5 kg whole turkey

Directions

Step 1
In a large container, dissolve the salt and sugar in the water to create a brine.
Step 2
Submerge the turkey in the brine, cover, and refrigerate for 12-24 hours.
Step 3
Remove the turkey from the brine, rinse thoroughly with cold water, and pat dry.
Step 4
Preheat the smoker to 107°C.
Step 5
In a small bowl, mix together the black pepper, garlic powder, onion powder, and paprika.
Step 6
Rub the turkey with olive oil and then coat with the spice mixture.
Step 7
Place the turkey in the smoker and smoke for 6-7 hours, or until the internal temperature reaches 74°C.
Step 8
Let the turkey rest for 20-30 minutes before carving.
