  • 240 grams applesauce
  • 10 grams baking powder
  • 5 grams baking soda
  • 30 grams butter
  • 480 milliliters buttermilk
  • 5 grams cinnamon
  • 250 grams flour
  • 2 large eggs
  • 2 grams salt
  • 25 grams sugar
  • 5 milliliters vanilla extract

Directions

Step 1
In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.

In another bowl, mix buttermilk, applesauce, eggs, melted butter, and vanilla extract until well combined.
Step 3
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

Heat a griddle or large skillet over medium heat and lightly grease it.

Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

Flip the pancakes and cook until the other side is golden brown, about 2 minutes more.
