  • 2 egg yolks
  • 3 cup milk
  • 0 teaspoon salt
  • 0.5 cup small pearl tapioca
  • 0.5 cup sugar
  • 1 teaspoon vanilla extract

Directions

Step 1
Soak the tapioca in water for 30 minutes, then drain.
Step 2
In a medium saucepan, combine the tapioca, milk, sugar, and salt.

Cook over medium heat, stirring constantly until the mixture comes to a full boil. Reduce heat and simmer for 5 minutes.

Slowly add a small amount of the hot tapioca mixture to the beaten egg yolks, stirring constantly. Return the egg mixture to the saucepan.

Bring to a gentle boil, then remove from heat and stir in vanilla extract.
