Directions
Step 1
Place the bulgur in a large bowl and pour the boiling water over it. Cover and let it sit for about 15 minutes, or until the bulgur is tender and has absorbed the water.

Fluff the bulgur with a fork and let it cool to room temperature.

Add the chopped parsley, mint, tomatoes, cucumber, and green onions to the bulgur and mix well.
Step 4
In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
