Directions
Step 1
Preheat your oven to 375°F (190°C).

In a large skillet, melt the butter over medium heat. Add the flour and stir constantly for about 1 minute to form a roux.

Gradually whisk in the milk, continuing to whisk until the mixture is smooth and begins to thicken. Add salt and pepper to taste.

In a greased 9x13-inch baking dish, layer half of the sliced potatoes and half of the onions. Pour half of the cream sauce over the layers. Repeat with the remaining potatoes, onions, and cream sauce.

Sprinkle the shredded cheddar cheese evenly over the top of the casserole.

Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is golden brown and the potatoes are tender.
Step 7
Let the dish rest for 10 minutes before serving to allow the sauce to set.
