  • 480 ml heavy cream
  • 1 tsp salt

Directions

Step 1
Pour the heavy cream into a stand mixer or large mixing bowl.

Beat on medium-high speed until the cream separates into butter and buttermilk. This will take about 10 minutes.
Step 3
Once the butter forms, strain the mixture through a cheesecloth or fine mesh sieve to separate the butter from the buttermilk.
Step 4
Knead the butter under cold water to remove any remaining buttermilk.
Step 5
Mix in salt if desired.
Step 6
Shape the butter into a ball or log and refrigerate until solid.
