Ingredients

  • 0.5 tsp black pepper
  • 2 boneless chicken breasts
  • 2 tbsp Cajun seasoning
  • 1 cup chicken broth
  • 2 cloves garlic
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 1 cup Parmesan cheese
  • 8 oz pasta
  • 1 red bell pepper
  • 1 tsp salt
  • 1 yellow bell pepper

Directions

Step 1
Season the chicken breasts with 1 tablespoon of Cajun seasoning.
Step 2
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Cook the chicken breasts until fully cooked, about 5-7 minutes per side. Remove and set aside.
Step 3
In the same skillet, add the remaining olive oil and sauté the bell peppers and garlic until tender, about 3-5 minutes.
Step 4
Reduce the heat to medium and add the heavy cream, chicken broth, and remaining Cajun seasoning. Stir to combine.
Step 5
Bring the mixture to a simmer, then add the Parmesan cheese and stir until the cheese is melted and the sauce thickens, about 3-5 minutes.
Step 6
Meanwhile, cook the pasta according to package instructions. Drain and set aside.
Step 7
Slice the cooked chicken breasts and add to the skillet along with the cooked pasta. Toss to coat everything in the sauce.
Step 8
Season with salt and black pepper to taste. Serve immediately.
