Step 1
Preheat your oven to 175°C (350°F).

In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust.

In a large bowl, beat the cream cheese and sugar together until smooth. Add the sour cream and vanilla extract, mixing until fully incorporated.

Add the eggs one at a time, beating on low speed until just blended. Do not overmix.

Pour the filling into the prepared crust. Smooth the top with a spatula.

Bake in the preheated oven for 55-60 minutes, or until the center is almost set. The center should still wobble slightly when you gently shake the pan.
