Brazilian Black Bean Stew

Ingredients

  • 100 g bacon
  • 2 bay leaves
  • 500 g black beans
  • 1 tsp black pepper
  • 4 garlic cloves
  • 1 onion
  • 1 orange
  • 300 g pork shoulder
  • 1 tbsp salt
  • 200 g smoked sausage
  • 2 L water

Directions

Step 1
Rinse the black beans and soak them in water overnight.
Step 2
In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.
Step 3
In the same pot, add the pork shoulder and cook until browned. Remove and set aside.
Step 4
Add the smoked sausage to the pot and cook until browned. Remove and set aside.
Step 5
In the same pot, sauté the onion and garlic until translucent.
Step 6
Drain the soaked beans and add them to the pot along with the cooked meats.
Step 7
Add the bay leaves, orange halves, salt, black pepper, and water to the pot.
Step 8
Bring to a boil, then reduce heat and simmer for about 2 hours, or until beans are tender and the stew has thickened.
Step 9
Remove the orange halves and bay leaves before serving.
Step 10
Serve hot with rice and garnish with chopped cilantro if desired.
