Ingredients

  • 200 g black rice
  • 0.5 bunch cilantro
  • 2 garlic cloves
  • 2 green onions
  • 2 tbsp olive oil
  • 1 onion
  • 1 red bell pepper
  • 1 tsp salt
  • 2 tbsp soy sauce
  • 500 ml water

Directions

Step 1
Rinse the black rice under cold water and drain.
Step 2
In a medium pot, combine the black rice, water, and salt. Bring to a boil over high heat.
Step 3
Reduce the heat to low, cover, and simmer for 30-35 minutes or until the rice is tender and the water is absorbed.
Step 4
In a large pan, heat the olive oil over medium heat. Add the minced garlic and diced onion, and sauté until translucent.
Step 5
Add the diced red bell pepper to the pan and cook for another 5 minutes, stirring occasionally.
Step 6
Stir in the cooked black rice, soy sauce, and chopped green onions. Cook for an additional 5 minutes, mixing well.
Step 7
Remove from heat and garnish with chopped cilantro before serving.
