Ingredients

  • 0.5 cup balsamic vinegar
  • 1 tbsp basil
  • 1 tsp black pepper
  • 0.5 cup chicken broth
  • 1 tsp garlic powder
  • 4 lamb chops
  • 2 tbsp olive oil
  • 1 tbsp rosemary
  • 1 tsp salt
  • 1 tbsp thyme
  • 1 tbsp white sugar

Directions

Step 1
In a small bowl, mix the rosemary, basil, thyme, garlic powder, salt, and black pepper.
Step 2
Rub the lamb chops with this mixture, and place them in a large resealable plastic bag. Pour in the olive oil, seal, and marinate in the refrigerator for at least 1 hour.

Preheat the oven to 200 degrees C.

In a small saucepan, mix the balsamic vinegar, chicken broth, and white sugar. Bring to a boil, reduce heat to low, and simmer until the mixture has reduced by half.

Heat a large oven-proof skillet over high heat. Sear the lamb chops for about 2 minutes on each side until browned.
Step 6
Transfer the skillet to the preheated oven, and roast the lamb chops for about 8-10 minutes, or until an internal temperature of 60 degrees C is reached.
Step 7
Remove from oven, cover with foil, and let rest for 5 minutes before serving. Drizzle with balsamic reduction.
