  • 4 egg yolks
  • 200 ml heavy cream
  • 150 g sugar
  • 1 tsp vanilla extract
  • 500 ml whole milk

Directions

Step 1
In a medium saucepan, combine the milk and cream. Heat over medium heat until just about to boil, then remove from heat.
Step 2
In a separate bowl, whisk together the egg yolks and sugar until the mixture becomes pale and thick.
Step 3
Slowly pour the hot milk mixture into the egg yolk mixture, whisking constantly to prevent the eggs from cooking.
Step 4
Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.
Step 5
Remove from heat and stir in the vanilla extract. Allow the mixture to cool completely.
Step 6
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
Step 7
Once churned, transfer the gelato to a container and freeze for at least 2 hours before serving.
