Ingredients

  • 10 basil leaves
  • 0.5 teaspoon black pepper
  • 8 fresh tomatoes
  • 2 garlic cloves
  • 2 tablespoons olive oil
  • 1 onion
  • 1 teaspoon salt
  • 750 ml vegetable broth

Directions

Step 1
Blanch the tomatoes in boiling water for 1-2 minutes, then transfer them to an ice bath. Peel and chop the tomatoes.
Step 2
Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
Step 3
Add the minced garlic and cook for another 1-2 minutes until fragrant.
Step 4
Add the chopped tomatoes, vegetable broth, salt, and black pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes.
Step 5
Blend the soup using an immersion blender until smooth.
Step 6
Stir in the fresh basil leaves and cook for another 2-3 minutes.
