  • 1 tablespoon cumin
  • 3 cloves garlic
  • 2.5 cups green bell peppers
  • 1.5 cups jalapeno peppers
  • 5 cups onions
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 12 ounces tomato paste
  • 10 cups tomatoes
  • 1.5 cups vinegar

Directions

Step 1
In a large pot, combine tomatoes, onions, green bell peppers, and jalapeno peppers.
Step 2
Stir in vinegar, tomato paste, cumin, salt, sugar, and garlic.

Bring the mixture to a boil, then reduce heat and simmer for 10 minutes, stirring occasionally.

While the salsa is cooking, prepare your canning jars and lids according to the manufacturer's instructions.

Ladle the hot salsa into hot jars, leaving 1/2 inch of headspace.
Step 6
Wipe the rims of the jars with a clean cloth, place the lids on, and screw the bands until fingertip tight.
Step 7
Process the jars in a boiling water bath for 15 minutes.

Remove the jars from the water bath and let them cool completely before storing.
