Ingredients

  • 1 bay leaf
  • 0.5 tsp black pepper
  • 2 pieces chicken breasts
  • 250 ml chicken broth
  • 2 pieces chipotle peppers in adobo sauce
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 1 onion
  • 1 tsp salt
  • 400 ml tomato sauce

Directions

Step 1
Boil the chicken breasts in a pot of water until fully cooked, about 20 minutes. Shred the chicken using two forks and set aside.
Step 2
In a large pan, heat the olive oil over medium heat. Add the sliced onion and cook until translucent, about 5 minutes.
Step 3
Add the minced garlic and cook for another minute until fragrant.
Step 4
Stir in the minced chipotle peppers, tomato sauce, chicken broth, salt, pepper, and bay leaf. Bring to a simmer.
Step 5
Add the shredded chicken to the pan and mix well to coat the chicken with the sauce. Simmer for another 10 minutes.
Step 6
Remove the bay leaf and adjust the seasoning if necessary. Serve hot.
