  • 125 grams all-purpose flour
  • 5 grams baking powder
  • 120 ml brandy
  • 225 grams bread crumbs
  • 110 grams brown sugar
  • 110 grams butter
  • 2 grams cinnamon
  • 1 grams cloves
  • 225 grams dried figs
  • 2 eggs
  • 120 ml milk
  • 80 ml molasses
  • 1 grams nutmeg
  • 1 tablespoon orange zest
  • 1 grams salt

Directions

Step 1
Chop the dried figs and soak them in brandy for at least 1 hour.
Step 2
In a large bowl, cream together the butter and brown sugar until light and fluffy.
Step 3
Beat in the eggs, one at a time, then stir in the molasses.
Step 4
In another bowl, combine the bread crumbs, flour, baking powder, salt, cinnamon, nutmeg, and cloves.
Step 5
Gradually add the dry ingredients to the butter mixture, mixing well after each addition.
Step 6
Stir in the milk, soaked figs (including any remaining brandy), and orange zest.
Step 7
Grease a pudding mold or a heatproof bowl and pour the batter into it.

Cover with a piece of greased parchment paper and then a layer of aluminum foil, securing it tightly with a string.

Place the mold in a large pot with a lid and add enough water to come halfway up the sides of the mold.
Step 10
Bring the water to a simmer and cover the pot. Steam the pudding for 2 hours, making sure to check the water level occasionally and add more if needed.
Step 11
Remove the pudding from the pot and let it cool slightly before unmolding.
Step 12
Serve warm or at room temperature, optionally with a dollop of whipped cream or a drizzle of brandy sauce.
