Directions
Step 1
Preheat your oven to 150°C (300°F) and line two baking sheets with parchment paper.
Step 2
In a food processor, blend the almond flour and powdered sugar until fine. Sift the mixture to remove any lumps.
Step 3
In a clean, dry bowl, beat the egg whites until foamy. Gradually add the granulated sugar and continue to beat until stiff peaks form. Add food coloring if desired.
Step 4
Gently fold the almond flour mixture into the beaten egg whites until well combined. The batter should flow like lava.
Step 5
Transfer the batter to a piping bag fitted with a round tip. Pipe small circles onto the prepared baking sheets, spacing them about 2 cm apart.
Step 6
Tap the baking sheets on the counter to release any air bubbles. Let the macarons sit at room temperature for 30 minutes to form a skin.
Step 7
Bake in the preheated oven for 15-18 minutes, or until the macarons are firm and can be easily lifted from the parchment paper. Allow to cool completely on the baking sheets.
Step 8
To make the filling, beat the butter until creamy. Gradually add the powdered sugar and vanilla extract, and beat until smooth.
Step 9
Pair up macarons of similar size and pipe or spread the filling onto the flat side of one macaron. Top with the second macaron to create a sandwich.
Step 10
Store the macarons in an airtight container in the refrigerator for 24 hours to allow the flavors to mature. Bring to room temperature before serving.
