Ingredients

  • 1 bay leaf
  • 2 carrots
  • 2 celery stalks
  • 1.5 kg chicken
  • 3 garlic cloves
  • 1 onion
  • 1 tsp salt
  • 3 L water
  • 10 whole black peppercorns

Directions

Step 1
Place the whole chicken in a large pot.
Step 2
Add chopped carrots, celery, quartered onion, and smashed garlic cloves to the pot.
Step 3
Add the bay leaf and whole black peppercorns.
Step 4
Pour in 3 liters of water.
Step 5
Bring the pot to a boil over medium-high heat.

Reduce the heat to low and let it simmer for about 1.5 to 2 hours.
Step 7
Skim off any foam that forms on the surface.
Step 8
After cooking, remove the chicken and vegetables from the pot.

Strain the broth through a fine-mesh sieve into a large bowl.

Season the broth with salt to taste.

Let the broth cool down before storing it in the refrigerator or freezer.
