These delightful Alfajores are traditional South American sandwich cookies filled with luscious dulce de leche. Perfect for tea time or a special treat!
Directions
Step 1
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, cornstarch, and baking powder.

In a large bowl, beat the butter and granulated sugar until light and fluffy.
Step 4
Add the egg yolks one at a time, beating well after each addition, then mix in the vanilla extract.

Gradually add the flour mixture to the butter mixture, mixing until a soft dough forms.

Roll the dough out on a lightly floured surface to about 1/4-inch thickness. Cut out circles using a cookie cutter.

Place the cookies on the prepared baking sheet and bake for 10-12 minutes, or until the edges are lightly golden.

Allow the cookies to cool completely on a wire rack.

Once cooled, spread dulce de leche on the bottom of half of the cookies and top with the remaining cookies to form sandwiches.

Dust the tops of the alfajores with powdered sugar before serving.
