  • 3 carrots
  • 3 stalks celery
  • 8 cups chicken broth
  • 0.5 cup chicken fat
  • 4 eggs
  • 1 cup matzo meal
  • 1 onion
  • 0.5 cup parsley
  • 1 tsp salt
  • 4 cups water

Directions

Step 1
In a large bowl, combine matzo meal, eggs, chicken fat, and salt. Mix until well combined. Refrigerate for 30 minutes.
Step 2
In a large pot, bring chicken broth and water to a boil.
Step 3
Wet your hands and shape the matzo mixture into balls about the size of a walnut.
Step 4
Gently drop the matzo balls into the boiling broth. Reduce heat to a simmer and cook for 30-40 minutes.
Step 5
Add carrots, celery, and onion to the pot. Cook for an additional 10-15 minutes until vegetables are tender.
Step 6
Season the soup with additional salt to taste, if needed. Stir in chopped parsley before serving.
