Directions
Step 1
Thinly slice the chicken breast and combine with 1 tbsp soy sauce and 1 tbsp cornstarch. Set aside to marinate for 15 minutes.

In a small bowl, combine the chicken broth, 1 tbsp soy sauce, and 1 tbsp cornstarch. Set aside.
Step 3
Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry until no longer pink, about 5 minutes. Remove and set aside.

In the same skillet, add the remaining 1 tbsp vegetable oil. Add the garlic and ginger, and stir-fry for 30 seconds until fragrant.

Add the mushrooms, broccoli, carrots, snow peas, and water chestnuts. Stir-fry for 4-5 minutes until the vegetables are crisp-tender.
