A delicious and easy-to-make stuffed zucchini recipe perfect for a healthy meal. These zucchinis are filled with a savory mixture of ground meat, vegetables, and cheese, and then baked to perfection.

  • 0.5 tsp black pepper
  • 60 g bread crumbs
  • 2 cloves garlic
  • 450 g ground beef
  • 2 tbsp olive oil
  • 1 onion
  • 50 g parmesan cheese
  • 1 tsp salt
  • 240 ml tomato sauce
  • 4 zucchini

Directions

Step 1
Preheat your oven to 375°F (190°C).
Step 2
Cut each zucchini in half lengthwise and scoop out the pulp, leaving a 1/4-inch thick shell. Chop the pulp and set aside.
Step 3
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until soft and fragrant, about 5 minutes.
Step 4
Add the ground beef to the skillet and cook until browned. Stir in the chopped zucchini pulp, tomato sauce, bread crumbs, Parmesan cheese, salt, and black pepper. Mix well to combine.
Step 5
Fill each zucchini shell with the meat mixture and place them in a baking dish.
Step 6
Bake in the preheated oven for 25-30 minutes, or until the zucchinis are tender and the filling is golden brown.
