Directions
Step 1
Cut the beef chuck roast into large chunks.
Step 2
Place the beef in the slow cooker.
Step 3
Add chipotle peppers, minced garlic, lime juice, apple cider vinegar, ground cumin, dried oregano, ground cloves, beef broth, salt, and black pepper to the slow cooker.
Step 4
Stir to combine the ingredients.
Step 5
Place bay leaves on top of the mixture.
Step 6
Cover and cook on low for 8-9 hours or on high for 6 hours.
Step 7
Remove bay leaves and shred the beef with two forks.
Step 8
Serve the barbacoa in tacos, burritos, or bowls.
