Ingredients

  • 3 bird's eye chili
  • 10 grams cilantro
  • 200 milliliters coconut milk
  • 3 tablespoons fish sauce
  • 30 grams galangal
  • 4 kaffir lime leaves
  • 2 stalks lemongrass
  • 3 tablespoons lime juice
  • 100 grams mushrooms
  • 1 onion
  • 200 grams shrimp
  • 2 tomatoes
  • 1 liters water

Directions

Step 1
Bring water to a boil in a large pot.
Step 2
Add lemongrass, kaffir lime leaves, galangal, and bird's eye chilies. Simmer for 10 minutes.
Step 3
Add shrimp, mushrooms, tomatoes, and onion to the pot. Cook until shrimp is pink and cooked through, about 5 minutes.
Step 4
Stir in fish sauce, lime juice, and coconut milk. Cook for another 3 minutes.
Step 5
Remove from heat and garnish with chopped cilantro. Serve hot.
