Step 1
Cut the top and bottom off the watermelon to create a flat surface, then slice away the rind to create a cylindrical shape.
Step 2
Cut the pineapple into rings and remove the core. Place the rings on top of the watermelon cylinder.
Step 3
Slice the kiwis and layer them over the pineapple rings.
Step 4
Arrange the strawberries, blueberries, and raspberries around the sides of the watermelon and on top.
Step 5
Garnish with fresh mint leaves.

Refrigerate the fruit cake for at least 1 hour before serving to allow the flavors to meld.
