Classic Bavarian Cream

  • 3 egg yolks
  • 7 g gelatin
  • 240 ml heavy cream
  • 1 pinch salt
  • 100 g sugar
  • 5 ml vanilla extract
  • 240 ml whole milk

Directions

Step 1
In a small bowl, sprinkle the gelatin over 60 ml of the milk and let it stand for about 5 minutes to soften.
Step 2
In a medium saucepan, whisk together the egg yolks, sugar, and salt until well combined.
Step 3
Add the remaining 180 ml of milk to the egg mixture and cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 5-7 minutes.
Step 4
Remove from heat and stir in the gelatin mixture until fully dissolved.
Step 5
Pour the mixture through a fine-mesh sieve into a large bowl and let it cool to room temperature, stirring occasionally.
Step 6
In a separate bowl, whip the heavy cream until soft peaks form, then fold it into the cooled custard mixture along with the vanilla extract.
Step 7
Pour the Bavarian cream into individual serving dishes or a large serving bowl and refrigerate for at least 4 hours or until set.
