Step 1
Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch.

In a bowl, mix together the softened butter, garlic, parsley, lemon juice, salt, and pepper until well combined. Shape the mixture into 4 equal portions and refrigerate until firm.
Step 3
Place one portion of the butter mixture in the center of each chicken breast. Fold the sides over the butter and roll up tightly, securing with toothpicks if necessary.

Dredge the chicken rolls in flour, then dip in the beaten eggs, and coat with breadcrumbs. Make sure the chicken is well-coated on all sides.
Step 5
Heat the vegetable oil in a deep skillet or fryer to 175°C (350°F). Fry the chicken rolls until golden brown and cooked through, about 10-12 minutes.
Step 6
Drain the chicken on paper towels and remove the toothpicks. Serve hot.
