Ingredients

  • 100 g carrots
  • 2 eggs
  • 2 cloves garlic
  • 4 green onions
  • 100 g green peas
  • 500 g rice
  • 15 ml sesame oil
  • 450 g shrimp
  • 60 ml soy sauce
  • 30 ml vegetable oil

Directions

Step 1
Heat 15ml of vegetable oil in a large skillet over medium-high heat.
Step 2
Add the shrimp and cook until pink and opaque, about 3-4 minutes. Remove and set aside.
Step 3
In the same skillet, add the remaining vegetable oil and sauté the garlic for about 30 seconds.
Step 4
Add the diced carrots and cook for about 3 minutes until tender.
Step 5
Push the carrots to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
Step 6
Add the cooked rice, green peas, and green onions to the skillet. Stir to combine everything well.
Step 7
Return the cooked shrimp to the skillet and pour the soy sauce and sesame oil over the rice mixture. Stir well to combine.
Step 8
Cook for an additional 2-3 minutes until everything is heated through and well mixed.
