Heat the olive oil in a large pot over medium-high heat.

Add the oxtails and sear on all sides until browned, about 8-10 minutes.

Remove the oxtails from the pot and set aside.

In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.

Stir in the flour and tomato paste, cooking for another 2 minutes.

Gradually add the beef broth, stirring constantly to avoid lumps.

Return the oxtails to the pot and add thyme, bay leaf, salt, and black pepper.
