Step 1
Preheat your smoker to 110°C (225°F).
Step 2
Rinse the turkey under cold water and pat it dry with paper towels.

Brush the turkey with olive oil, making sure to cover all areas.

In a bowl, mix together salt, black pepper, garlic powder, onion powder, and paprika.

Rub the spice mixture all over the turkey, including under the skin and inside the cavity.

Place the turkey in the smoker, breast side up.

Insert a meat thermometer into the thickest part of the thigh without touching the bone.

Smoke the turkey, basting it occasionally with apple juice, until it reaches an internal temperature of 75°C (165°F). This will take approximately 30-40 minutes per kg.
