Ingredients

  • 500 g Beef
  • 200 g Egusi seeds
  • 2 Onions
  • 200 ml Palm oil
  • 1 tsp Pepper
  • 1 tsp Salt
  • 300 g Spinach
  • 2 Stock cubes
  • 3 Tomatoes
  • 1000 ml Water

Directions

Step 1
Blend the Egusi seeds with a little water to form a thick paste and set aside.
Step 2
Heat the palm oil in a large pot over medium heat.
Step 3
Add the chopped onions and tomatoes to the pot and sauté until soft.
Step 4
Add the beef chunks and cook until browned on all sides.
Step 5
Add the Egusi paste to the pot and stir well to combine with the meat and vegetables.
Step 6
Pour in the water and add the stock cubes, ground pepper, and salt. Stir to combine.
Step 7
Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes.
Step 8
Add the chopped spinach to the pot and cook for another 5-10 minutes until the spinach is tender.
Step 9
Taste and adjust seasoning if necessary.
Step 10
Serve hot with your choice of side such as pounded yam, fufu, or rice.
