Step 1
Blend the Egusi seeds with a little water to form a thick paste and set aside.

Heat the palm oil in a large pot over medium heat.

Add the chopped onions and tomatoes to the pot and sauté until soft.

Add the beef chunks and cook until browned on all sides.

Add the Egusi paste to the pot and stir well to combine with the meat and vegetables.

Pour in the water and add the stock cubes, ground pepper, and salt. Stir to combine.

Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes.
