  • 480 g all-purpose flour
  • 2 tsp baking soda
  • 1 egg
  • 1 tsp ground cinnamon
  • 0.5 tsp ground cloves
  • 1 tbsp ground ginger
  • 120 ml molasses
  • 0.5 tsp salt
  • 200 g sugar
  • 170 g unsalted butter

Directions

Step 1
Preheat oven to 350°F (175°C).
Step 2
In a medium bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, and salt.

In a large bowl, cream together the softened butter and sugar until light and fluffy.
Step 4
Beat in the molasses and egg until well combined.
Step 5
Gradually stir the dry ingredients into the wet ingredients until fully incorporated.
Step 6
Roll dough into 1-inch balls and place them 2 inches apart on ungreased baking sheets.
Step 7
Bake for 10-12 minutes or until the edges are firm and the tops are cracked.
Step 8
Allow cookies to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
