Directions
Step 1
Melt the butter in a microwave-safe bowl for about 30 seconds to 1 minute until fully melted.
Step 2
In another microwave-safe bowl, whisk together the egg yolks, lemon juice, water, salt, and cayenne pepper.
Step 3
Slowly add the melted butter to the egg mixture while continuously whisking until well blended.
Step 4
Microwave the mixture on medium power for 15 seconds. Remove and whisk. Repeat this process until the sauce is thickened and smooth, usually 3-4 cycles.
Step 5
Serve immediately over your favorite dish or keep warm until ready to use.
