Ingredients

  • 0.5 tsp black pepper
  • 60 g butter
  • 1000 ml chicken broth
  • 30 g flour
  • 15 g fresh parsley
  • 3 cloves garlic
  • 240 ml heavy cream
  • 500 g mushrooms
  • 15 ml olive oil
  • 1 onion
  • 1 tsp salt

Directions

Step 1
In a large pot, melt the butter with the olive oil over medium heat.
Step 2
Add the diced onion and cook until softened, about 5 minutes.
Step 3
Stir in the minced garlic and cook for another minute.
Step 4
Add the sliced mushrooms and cook until they release their moisture and become tender, about 10 minutes.
Step 5
Sprinkle the flour over the mushrooms and stir to coat. Cook for 2 minutes.
Step 6
Gradually pour in the chicken broth, stirring constantly to avoid lumps.
Step 7
Bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes.
Step 8
Stir in the heavy cream and let it heat through for about 5 minutes. Do not let it boil.
Step 9
Season with salt and black pepper to taste.
Step 10
Garnish with chopped fresh parsley before serving.
