Directions
Step 1
Rinse the split peas under cold water and set aside.

In a large pot, combine the split peas, ham hock or bone, carrots, celery, onion, garlic, bay leaf, thyme, salt, and black pepper.

Add the water and bring the mixture to a boil over medium-high heat.

Once boiling, reduce the heat to low and let it simmer for about 1.5 hours, or until the peas are tender and the soup has thickened.

Remove the ham hock or bone from the pot, shred any meat off the bone, and return the meat to the soup.
