  • 60 g butter
  • 60 ml cream
  • 240 g flour
  • 900 g potatoes
  • 5 g salt
  • 15 g sugar

Directions

Step 1
Boil the potatoes in a large pot until they are tender, about 20 minutes. Drain and allow them to cool slightly.
Step 2
Rice or mash the potatoes until smooth. Add the butter, cream, sugar, and salt to the potatoes and mix well.

Gradually add the flour to the potato mixture, mixing until a dough forms. The dough should be soft but not sticky.
Step 4
Divide the dough into small balls, about the size of a golf ball. Roll each ball out on a floured surface until very thin.
Step 5
Heat a griddle or large skillet over medium-high heat. Cook each lefse until brown spots appear, about 1-2 minutes per side.
Step 6
Transfer the cooked lefse to a clean kitchen towel and cover to keep warm and soft. Serve warm with your favorite toppings.
