Ingredients

  • 1500 ml beef broth
  • 0.5 tsp black pepper
  • 2 carrots
  • 30 grams cilantro
  • 1 egg
  • 2 garlic cloves
  • 450 grams ground beef
  • 225 grams ground pork
  • 1 tbsp olive oil
  • 1 onion
  • 2 potatoes
  • 1 tsp salt
  • 425 grams tomato sauce
  • 65 grams white rice
  • 1 zucchini

Directions

Step 1
In a large bowl, combine ground beef, ground pork, uncooked rice, beaten egg, chopped onion, minced garlic, chopped cilantro, salt, and black pepper. Mix well to combine.
Step 2
Form the mixture into meatballs, about 1 inch in diameter.
Step 3
Heat olive oil in a large pot over medium heat. Add the meatballs and cook until browned on all sides. Remove the meatballs and set aside.
Step 4
In the same pot, add chopped carrots, potatoes, and zucchini. Cook for about 5 minutes, stirring occasionally.
Step 5
Add tomato sauce and beef broth to the pot. Bring to a boil.
Step 6
Return the meatballs to the pot. Reduce heat to low and simmer for about 30 minutes, or until the vegetables and rice are tender and the meatballs are cooked through.
Step 7
Adjust seasoning with additional salt and pepper, if needed. Serve hot.
