Rinse and soak the chickpeas in water overnight.

Drain and rinse the chickpeas. Place them in a large pot, cover with water, and bring to a boil. Reduce heat and simmer until tender, about 1 hour.

In a large skillet, heat oil over medium heat. Add cumin seeds and cook until fragrant, about 1 minute.

Add onions, garlic, and ginger. Cook until onions are golden brown, about 5 minutes.

Stir in diced tomatoes, ground coriander, ground cumin, turmeric, cayenne pepper, and salt. Cook for 5 minutes.
