  • 1 tablespoon allspice
  • 1 teaspoon black pepper
  • 2 tablespoons brown sugar
  • 8 chicken drumsticks
  • 1 teaspoon cinnamon
  • 3 garlic cloves
  • 1 tablespoon ginger
  • 2 tablespoons lime juice
  • 1 teaspoon nutmeg
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 2 scotch bonnet peppers
  • 2 tablespoons soy sauce
  • 1 tablespoon thyme
  • 2 tablespoons white vinegar

Directions

Step 1
In a large bowl, combine allspice, thyme, cinnamon, nutmeg, brown sugar, salt, and black pepper.

Add the chopped scotch bonnet peppers, minced garlic, and grated ginger to the spice mix.

Stir in soy sauce, white vinegar, lime juice, and olive oil to form a marinade.

Add the chicken drumsticks to the bowl and coat them thoroughly with the marinade.

Cover the bowl and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to meld.

Preheat your oven to 375°F (190°C).

Place the marinated chicken drumsticks on a baking sheet lined with parchment paper.
