  • 250 g all-purpose flour
  • 15 g baking powder
  • 5 g baking soda
  • 1 egg
  • 5 g ground cinnamon
  • 2 g ground ginger
  • 1 g ground nutmeg
  • 375 ml milk
  • 200 g pumpkin puree
  • 2 g salt
  • 50 g sugar
  • 5 ml vanilla extract
  • 30 ml vegetable oil

Directions

Step 1
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
Step 2
In another bowl, mix the milk, pumpkin puree, egg, vegetable oil, and vanilla extract until well combined.
Step 3
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Step 4
Heat a non-stick skillet or griddle over medium heat and lightly grease it.
Step 5
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
Step 6
Serve warm with your favorite toppings such as maple syrup, butter, or whipped cream.
