A delicious and spicy Chinese dish featuring stir-fried chicken, peanuts, vegetables, and chili peppers in a flavorful sauce.
Directions
Step 1
In a bowl, combine the chicken, 30ml of soy sauce, 15ml of rice vinegar, sesame oil, and cornstarch. Mix well and let marinate for 20 minutes.
Step 2
Heat the vegetable oil in a large pan over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
Step 3
In the same pan, add the garlic, ginger, and dried red chilies. Stir-fry for about 1-2 minutes until fragrant.
Step 4
Add the bell pepper and green onions to the pan. Stir-fry for another 2-3 minutes until the vegetables are slightly tender.

Return the chicken to the pan and add the remaining 30ml of soy sauce, 15ml of rice vinegar, hoisin sauce, sugar, and water. Stir well to combine.
Step 6
Add the roasted peanuts and continue to cook for an additional 1-2 minutes until the sauce thickens and coats the chicken and vegetables.

Serve hot with steamed rice or noodles.
